            "The Original Pasta Snack"â


When our founder, Elaine Katz, a nutritionist and nurse received a call from the school nurses that her five-year old Jared, was hyperactive it was cause for great distress.  At the time, some thirty years ago, the term ADD wasn’t loosely thrown around as common explanation for children’s excited behavior. “It was a big stigma then,” Elaine said.  Elaine (nicknamed “Lainie”) explored natural diets as a means to help her son.  Not wanting to take the easy way out through medicine, she sought the help of Dr. Feingold, inventor of the Feingold Diet that calls for no artificial preservatives or additives in food products.  She soon discovered that preservatives such as BHA and BHT found in most snacks would cause her son to bounce off the wall.


This prompted Elaine to create her own snack that she could trust was really healthy and natural.  Despite the healthy ingredients, it became a huge hit among Jared’s classmates, selling for 10 cents a chip at bake sales and becoming the most popular snack at friends’ parties.  Parents loved it too, asking Elaine to bring it along when visited. 


She invented a chip made not from potatoes, like most children were eating but from fresh homemade pasta.  Using unbleached semolina flour, specially seasoned and cooked, she produced the only all natural pasta chip with no artificial ingredients, no cholesterol, and 50% less fat than other leading snack chips.

Lasagna Chips is not only unique for it’s idea but also for it’s original new packaging.  Lasagna Chips come in beautiful foil bags that describe its flavors using catchy quotes like “A Kiss by the Sea” for its Sea Salt flavor, “The Perfect Marriage” for Garlic & Oregano, “Red Velvet” for Tomato Basil, and lastly, “The Wild West” for Barbeque. It’s a definite attraction when the consumer sees a little humor to go with a product, it makes it more inviting, Arlyne Katz, President of A&J Snack Foods.

Fifteen years ago, while living on Long Island, Elaine tried turning her invention into a business.  She began making samples out of her garage and received positive response from people tasting it, but the demands of motherhood proved to be too great to juggle a business as well.  It was her son Jared, now 37, who recently turned his mother’s old venture into a reality.
